Ingredients
  

For the Roll-Ups

  • 6 small low-carb tortillas (street taco size)
  • 5 oz cream cheese, softened Ensure cream cheese is softened for easy mixing.
  • ¼ cup powdered Swerve (confectioner’s sugar substitute) Adjust sweetness to taste.
  • ¼ cup granulated Swerve (or preferred keto sweetener)
  • 2 tsp cinnamon, divided
  • 4 tbsp butter, melted Use for frying and brushing roll-ups.

Preparation

  • In a bowl, mix the softened cream cheese, 1 tsp cinnamon, and ¼ cup powdered Swerve until smooth.
  • Spread 2 tbsp of the cream cheese mixture down the center of each tortilla.
  • Roll the tortillas tightly, tucking in the edges to seal them.

Cooking

  • Heat a skillet over medium heat and melt 2 tbsp of butter.
  • Add the roll-ups seam-side down. Cook for 2-3 minutes on each side until they are golden and crispy.
  • Remove the roll-ups and brush with the remaining melted butter.
  • Mix the ¼ cup granulated Swerve with the remaining 1 tsp cinnamon.
  • Sprinkle or roll the warm roll-ups in the cinnamon-sugar mixture.

Notes

Serve warm for the best flavor and texture. Great on their own or can be topped with fresh berries or whipped cream. Store leftovers in an airtight container in the refrigerator.
